Game Day – Club Tavern Chili

This recipe is inspired by the Chili served at the Iconic Club Tavern, AKA the “Horseman’s Headquarters” in West De Pere, Wisconsin.
A time -honored tradition before heading to “City Stadium” for the game on a crisp fall afternoon , or taking a batch to Deer Camp, this one is a Winner!

Ingredients:

  • ¼ Cup Extra Virgin Olive Oil
  • 1lb Ground Sirloin
  • 2lbs Cubed Country Style Ribs (1/2” cubes)
  • (2) 28oz Cans of Whole Peeled Tomatoes
  • (1) 6oz Can of Tomato Paste
  • (3) 15.5oz Cans of Brooks Hot Chili Beans (Do Not Drain)
  • (4) Stalks Celery, Chopped
  • (1) Green Pepper, Chopped
  • (1) Medium Size White Onion, Diced
  • (1) Tbsp Minced Garlic
  • 3oz (1/2 Jar) Club Tavern Chili Seasoning

Optional (Recommended!): Dante’s Inferno Hot Pepper Blend

Directions:

1) Heat Extra Virgin Olive Oil on medium high in a 6qt Chili Pot
2) Once hot, Add Ground Sirloin and Cubed Country Style Ribs and brown, stirring often,
remove from heat and drain after browning.
3) Add Diced Onion, Chopped Celery, Chopped Green Pepper and Minced Garlic. Simmer
for an additional three to four minutes.
4) Add 3oz (1/2 Jar) of Club Tavern Chili Seasoning and blend with the Veggies & Meat.
Bloom mixture for 1 to 2 minutes being careful not to burn the seasoning (add more
EVO if necessary).
5) Add Whole Tomatoes and “Mash” to pop them open. (Be careful, they squirt!)
6) Add the Brooks Hot Chili Beans, Juice and all!
7) Stir in the Tomato Paste to thicken.
8) Simmer for two to three hours Minimum. Don’t be afraid to make this a day before the
game and store it in the refrigerator, the flavors really come together after sitting
overnight.


    Heat Option:

    Adding Dante’s Inferno: Since everyone likes their heat at a different level, we made the Club Tavern Chili Seasoning mild which allows you to adjust the heat level to your exact liking. Our Hot Pepper Blend (Dante’s Inferno) is a combination of seasonal Home Grown, Dried and Ground Super Hots (Habanero’s, Ghost Peppers, Carolina Reapers, Cyanne), Crushed Red Pepper Flakes and Hickory Seasoning for a touch of Smoke. That’s it! – no fillers or preservatives. Since this Hot Pepper Blend is Highly concentrated, a little bit goes a long way. Start by adding a ½ tsp. to the entire pot and let that simmer for a while to let the heat blend in before adding more. Remember, you can always go hotter, but you can’t go back!  If some like it mild and some like it hot, use the Hot pepper Blend as a side offering allowing people to add to their taste.
