This month’s Featured Product is our Memphis Style Rub.
Even though Signature Spice Fusions is based in Jackson, Wisconsin, we have the grill & smoker ready to fire up all year around. One of our favorite Saturday night dinners consists of a rack of ribs (Baby Backs, Spareribs, St. Louis style or Country Style), cooked low and slow while enjoying a cocktail (or two) with “BB King” playing in the background. After several years of using the same ol’ store bought BBQ sauces which are full of sugar and preservatives, it got, well, boring! That’s when I started playing around with making a custom Dry Rub which after a lot of experimentation, finally evolved into our Signature Rub, the Memphis Style Dry Rub. This rub consists of 14 hand blended herbs and spices made up in small batches to control the quality and consistency. This recipe is “Our take on a dry rub derived from the 1920’s Beale Street Nightclubs where Memphis Style BBQ and Blues Legends were born”.
A true Memphis rub is a fusion of sweet, savory, and smoky notes. Brown sugar adds a touch of sweetness, while smoked paprika brings a vibrant color and earthy undertone. Cracked black pepper and our Signature hot pepper blend provide a hint of heat, balanced by the warmth of granulated garlic and onion powder. Don’t forget the Signature Memphis touch – a hint of cracked celery seed for a unique depth of flavor. Original Memphis rubs were based on traditional Greek style seasonings at restaurants throughout the South, so think smoked paprika, garlic, and herbs like oregano and thyme.
Our Fusion takes some of our favorite flavor aspects and blends them into a slightly sweet, savory, earthy flavor palette ideal for Ribs, Pork Shoulder, Brisket, Chops, Chicken and Wild Game dishes. This fusion of Herbs and spices is one of those barbecue rubs that should be in every pitmaster’s arsenal.
